Vanilla Coffee Creamer

I am making an effort to eliminate processed foods from our house. The exception to this is my coffee creamer.  I just can't give it up! I have however found an alternative. I know coffee creamer is not the best thing to consume for my waistline, but the only processed thing is the sweetened condensed milk therefore I am justifing this consumption! :)

1 can sweetened condensed milk
1 1/2 C regular milk (non fat or reduced fat is fine)
1 tbs vanilla extract ~ Pampered Chef's Madasgar is SUPER GOOD!

Combine all ingredients and refrigerate. Good for 2 weeks. Make sure you shake it up each time you use it, the condensed milk settles to the bottom because it is so heavy...

Some other variations:

Caramel Vanilla
same as Vanilla plus 1/4 cup caramel sauce

Amaretto
1 can sweetened condensed milk
1 1/2 cups nonfat milk
1/2 tsp. cinnamon
1 tsp. almond extract

Mocha Almond
1 can sweetened condensed milk
1 1/2 cups nonfat milk
1 to 2 Tbsp. unsweetened cocoa powder
1 tsp. almond extract

Chocolate Mint
1 can sweetened condensed milk
1 1/2 cups nonfat milk
3 Tbsp. unsweetened cocoa powder
1 tsp. peppermint extract

You can also try creating a powder from your favorite candy by adding bits of candy to your food processor and processing until the candy bits are a powder, you can add new flavors to your coffee creamer with a fraction of the cost of commercial flavored creamers. Simply add the powdered candy bits to your liquid coffee creamer and shake well to dissolve.
