Salmon Burger's with pesto

Costco has the BEST salmon burgers. The come in a sleeve like hamberger's in the frozen section. They are a yummy way to get your serving of fish. In the winter we bake them, in the summer we grill them. I recommend seasoning with lemon pepper before you cook the patty.

I have taken to topping it with pesto and cheese then grilling in my panini pan but it would be great on a good bun with the pesto alone. I came across a creamy pesto recipe and it turned out fabulous. I did make a few changes to make it the consistancy I prefer. Enjoy!

1 cup firmly packed basil or italian parsley
2 large cloves garlic, roasted
1/2 cup parmesan or romano cheese
2 Tablespoons pine nuts, toasted
2 1/2 Tablespoons extra virgin olive oil
1 1/2 Tablespoons half and half
salt and pepper, to taste

Roast garlic for a few minutes in 350 degree oven until aromatic the last. In a food processor pulse the parmesan cheese until it is the consistency of bread crumbs. Add the nuts and garlic until coarsely combined. Add basil and process until combined. While the processor is running slowly add the olive oil until a paste forms. Add the cream/milk and pulse a few times to incorporate.
