Marinated Flank Steak

Since we ordered a half a cow and are down to the cuts that require creativity, my skills are getting tested these days. When I looked up the best way to cook the flank steak all the research showed that it really needed to be marinated to break down the fat. We really enjoyed this recipe so enjoy!

Marinade:
1/3 c. olive oil
4 cloves garlic, minced
2 Tbsp red wine vinegar
1/3 c. soy sauce
1/4 c. honey
1/2 tsp. fresh ground pepper

Score the surface of the steak with 1/4 inch deep knife cuts, about an inch apart across the grain of the meat. Combine the marinade ingredients. Place the steak and marinade in a large ziplock making sure the meat is covered. Marinate for at least 2 hours.

Grill the steak for 5 to 7 minutes on each side for rare and 7 to 10 minutes on each side for medium rare to medium. It is recommended flank steak not be grilled past medium because the meat will dry out and toughen up.
