Broccoli Chicken Stir Fry

1 Tbsp. oil
1 lb. boneless skinless chicken breasts, cut into strips
4 c. vegetables (broccoli flowerets, red pepper strips, etc.)
1 1/2 c. chicken broth
2 Tbsp. each soy sauce and cornstarch
1 tsp. garlic powder
1/4 tsp. ground ginger
2 c. minute rice, cooked

Stir fry chicken in hot oil until browned.  Add vegetables; cook and stir until tender crisp.

Mix broth, soy sauce, cornstarch and spices' stir into skillet.  Bring to boil; boil 1 minutes.

Meanwhile prepare rice as directed on package.  Serve chicken and vegetables over rice.
