Mozzarella Meatloaf

1 1/2 lb ground beef
3/4 c. saltine crackers, crushed
1 pkg dry onion soup mix
1 tsp salt
1/2 tsp pepper
1 egg
8 oz. can tomato sauce
2 c. mozzarella cheese, grated

Combine meat, crumbs, seasoning, egg and 1/3 c. tomato sauce.  On waxed paper shape meat into 12 x 10 rectangle.

Sprinkle cheese evenly to 1 inch of the edges of the meat.  Roll up jelly roll style and tuck the ends under.  Place in loaf pan and bake at 350 degrees for 1 hours.  Pour remaining sauce on top and bake for 15 minutes more.
