Zucchini Brownies

Tis the season for zucchini overload.  This is Kristin's recipe.  Enjoy!

2 c. zucchini, shredded

1/2 c. oil
2 tsp. vanilla
2 c. flour
1 1/4 c. sugar
1 tsp. salt
1/4 c. cocoa
1 1/2 tsp. baking soda

Pack zucchini in measuring cup. Combine zucchini, oil and vanilla, set aside.

Mix dry ingredients together. Add zucchini mixture. Pour into greased 9x13 pan.

Bake 350 degrees for 25 min. Cool, add frosting if desired.

Instead of frosting Sis just puts chocolate chips in the batter.
