Fish Taco's

We had these tonight and they were delish. I need to remember to take a picture BEFORE we eat. Otherwise the only picture left is of an empty pan. OOPS!

Ingredients

Tacos:
1 lb white flaky fish, I used Cod because I had it on hand ~ any white fish will do
1/4 cup olive oil
1 lime, juiced or if you get ripped off use 1 TBSP juice from a bottle :)
1 tablespoons Pampered Chef Chipotle Seasoning
1/4 cup chopped fresh cilantro leaves
8 corn tortillas

Garnish:
Shredded white cabbage
Salsa
Sour cream
Thinly sliced red onion (optional)
Thinly sliced green onion (optional)
Chopped cilantro leaves

Directions:
Place fish in a medium size dish. Whisk together the oil, lime juice, seasoning, and cilantro and pour over the fish. Let marinate for 15 to 20 minutes.

Preheat pan on medium-high heat. Remove the fish from the marinade place onto a hot grill, flesh side down. Grill the fish for 4 minutes on the first side and then flip for 30 seconds and remove. Let rest for 5 minutes then flake the fish with a fork. Put back into pan and toss to get all the seasoning left behind.

Place the tortillas on the grill and grill for 20 seconds. Divide the fish among the tortillas and garnish with any or all of the garnishes.
