This is one of the two kinds I make for my parents annual open house. Enjoy!
1 lb. large white mushrooms
1 pkg. Stove Top stuffing mix and ingredients to make
1 c. colby jack cheese
Prepare stuffing mixture according to directions
Wash mushrooms and remove stems. Yes I wash them, I know your not supposed to but I do
Drizzle cookie sheet with olive oil
Stuff mushroom caps with generous amount of stuffing mixture and place on cookie sheet closely
Top with cheese
Broil until cheese is melted
I make them a night ahead and refrigerate until I am ready to cook them.
