I am a scramble egg girl 99% of the time. I do like eggs Benedict occasionally but my go to is always scrambled. These are a game changer for me. They are more work but worth it!
INGREDIENTS:
- 6 large eggs
- 1 c. freshly grated Parmesan cheese
- salt
- ground black pepper
- 1 1/4 C. Colby jack or cheddar cheese, shredded
DIRECTIONS:
- Preheat oven to 450° and grease a large baking sheet with cooking spray.
- Make 6 mounds (3 Tbsp each) of shredded colby jack or cheddar cheese
- Separate egg whites and yolks, placing egg whites in a large bowl and yolks in a small bowl. Using a whisk or hand mixer, beat egg whites until stiff peaks form, 3 minutes. Gently fold in Parmesan, salt and pepper.
- Spoon 6 mounds of egg whites onto prepared baking sheet and indent centers to form nests. Bake until lightly golden, about 3 minutes.
- Carefully spoon an egg yolk into center of each nest and season with salt and pepper. Bake until yolks are just set, about 3 minutes more.
Notes: I do the final cook for 4 mi utes on my eggs because I like them a bit more done. Adjust the time for your preferred doneness.
