Butter Rum Batter

This recipe makes 1 Quart

1 quart vanilla ice cream, softened 
1 lb brown sugar
1 lb powdered sugar
1 lb butter
1 tsp nutmeg
1 Tbsp allspice
1 Tbsp cinnamon
  1. Melt butter in a large pot over medium heat. Blend in brown sugar and confectioners' sugar. Remove from heat, and whisk in the ice cream, cinnamon, and nutmeg. Pour mixture into a plastic container, seal, and freeze
  2. In a coffee mug, measure 1 tablespoon Hot Buttered Rum Batter and 1 fluid ounce of rum, then fill cup with boiling water. Stir, and sprinkle top of drink with nutmeg.

Delta Sunset

1/2 oz rasberry liquor                                    1/2 oz cointreau
1 1/2 oz tequilla                                             1/2 oz fresh lime
sweet and sour to taste

Shake over ice.

Bloody Mary Mix

46 oz. tomato juice
2 Tbsp Worcestershire sauce
2 Tbsp lemon juice
1 Tbsp Pampered Chef Italian Seasoning (or Italian Salad dressing mix if you don't have the seasoning)
1 tsp dill weed
1/4 tsp garlic salt
1/8 tsp Tabasco - more if you like it spicier
1 Tsp prepared horseradish (optional)

Mix and enjoy with or without vodka.

Mojito

These are a bit of work but it's funny to watch your friends running around with mint in their teeth, right Marie?

Per drink:
3 fresh mint sprigs
2 tsp. sugar
3 Tbsp fresh lime juice
1 1/2 oz. light rum
club soda

In a tall thin glass, crush part of the mint with a fork to coat the inside of the glass.  Add the sugar and lime juice and stir thoroughly.  Top with ice.  Add rum and mix.  Top off with *chilled* club soda.  Add the remaining mint.

"57" T-bird

This is one of my mom's creations and it is yummy.  It also is made by the pitcher so it's great for a party.

2 oz. vodka
2 oz. ameretto
2 oz. Southern Comfort
2 oz. triple sec
orange juice
7 up

Add alcohols, the top with half oj and half 7up

Irish Creme

This is the bomb! 

1 pint half and half
14 oz. condensed milk
1 tsp. vanilla
2 Tbsp chocolate syrup
13 oz. whiskey - the better the whisky the better the end result

Blend well.  Refrigerate.

Kahlua

One of my favorite drinks around the holiday is a White Russian.  Here is a recipe for the Kahlua.  It makes a great gift if someone you know likes coffee flavored drinks.

3 1/4 c. sugar
3 C. water
Boil for 5 -7 minutes

Separately:
1/4 c. water
1/4 c. instant coffee
Bring to a boil until coffee dissolves completely

Immediately combine both mixes into a large container with 1/2 a vanilla bean.  Once mix has cooled completely add 4/5 bottle of 100 proof vodka.  Age 2 weeks moving upside down occasionally to keep mixing up.

Watermelon Margarita's

In anticipation of a party on Friday wherein these will be made I am posting this! Let's hope they are as good as they sound!!!

INGREDIENTS
2 teaspoons sugar
1 lime wedge
3 1/2 cups cubed seeded watermelon
1/2 cup tequila ~ I like Margaritaville Lime
3 tablespoons sugar
3 tablespoons fresh lime juice
1 tablespoon triple sec (orange-flavored liqueur)
Lime wedges (optional)

DIRECTIONS
Place 2 teaspoons sugar in a saucer. Rub rims of 6 glasses with 1 lime wedge; spin rim of each glass in sugar to coat. Set prepared glasses aside. Combine watermelon and next 4 ingredients (watermelon through triple sec) in a blender; process until smooth. Fill each prepared glass with 1/2 cup crushed ice. Add 1/2 cup margarita to each glass. Garnish each glass with a lime wedge, if desired. Serve immediately.

You can freeze the diced watermelon for up to two weeks. Place diced watermelon on a cookie sheet in the freezer for six hours or overnight. Store frozen cubes in a zip-top freezer bag until ready to use.

Sangria

INGREDIENTS
1 lemon
1 lime
1 orange
1 1/2 cups rum ~ white or spiced work great
1/2 cup white sugar
1 (750 milliliter) bottle dry red wine ~ red burgandy
1 cup orange juice

DIRECTIONS
Have the fruit, rum, wine, and orange juice well chilled. Slice the lemon, lime and orange into thin rounds and place in a large glass pitcher. Pour in the rum and sugar. Chill in refrigerator for 2 hours to develop the flavors.
When ready to serve, crush the fruit lightly with a wooden spoon and stir in the wine and orange juice. Adjust sweetness to taste

Beer Margarita's aka Kate's Southern Margarita's

As made in Marysvale on Katie's front porch

Ingredients:
1 (12 fluid ounce) can frozen limeade concentrate
12 fluid ounces tequila
12 fluid ounces water
12 fluid ounces beer
ice
1 lime, cut into wedges

DIRECTIONS
Pour limeade, tequila, water, and beer into a large pitcher. Stir until well-blended, and limeade has melted. Add plenty of ice, and garnish with lime wedges. Adjust with additional water, if needed.

Southern substitue Amaretto for water. Both ways are amazing!

Lemon Drop's

I guessed this recipe off of a bartender in North Carolina (long story!) and she made the best Lemon Drops I have EVER had. Thanks to Laura @ Chicago Pizzaria in Raleigh.

1 shot citron vodka
1 shot sour mix*
1 Tbsp sugar
splash 7-up
Shake with ice and serve cold with sugared rim glass.

*Citrus simple syrup
3 part sugar
2 part water
1 part lemon and lime juices

Cherry Mojito's

This recipe is A LOT OF WORK, but very worth it!

Ingredients:

1 1/4 cups sugar
1 1/4 cups fresh lime juice (about 9 limes)
3 pounds dark cherries, such as Bing or Burlat, pitted
2 1/4 cups vodka
1 bottle sparkling water

Directions:

Bring sugar and 1 1/4 cups water to a boil in a small saucepan, stirring until sugar has dissolved. Remove from heat; let cool completely. (Makes about 2 cups syrup.) Syrup can be refrigerated in an airtight container up to 1 month.
Put lime juice into a medium nonreactive bowl. Halve 2/3 of the cherries; add all cherries to lime juice. Stir in syrup. Refrigerate at least 1 hour (up to overnight).
Stir cherry mixture and vodka in a large serving bowl. Fill 12 glasses with ice. Spoon 1/2 cup cherry-vodka mixture into each glass. Top with sparkling water; serve immediately.

Amaretto

This request was made by many since I made it as gifts for Christmas!

2 cups water
3 cups of sugar
4 cups of vodka
1/4 cup almond extract
1 Tbsp plus 1 tsp vanilla extract

Bring water and sugar to a boil. Cook until sugar completely dissolved. Cool syrup to room temperature. (VERY IMPORTANT OR YOU WILL COOK ALL OF THE ALCHOL OUT)

Add vodka, almond and vanilla extract.

Store in air tight container.
