Cafe Rio "esque" House dressing

This is why I grew tomatillos last year!

1 large jalapeno

3 cloves garlic
1-4 tomatillos - more more flavor. They do NOT taste like tomatoes!

1 handful cilantro
1 lime, juice only
1 c milk
1 c mayonnaise
1 pkg Hidden Valley Ranch salad dressing mix

Blend all ingredients except mayonnaise in blender until smooth. Whisk in the mayo and chill until ready to serve.

Vinegrette

A classic French vinaigrette is typically three to four parts oil (usually extra virgin olive oil) and one part acid (frequently red wine vinegar). Seasonings include salt, pepper (freshly ground) and often Dijon mustard and/or garlic. You may be able to use less oil and more acid ingredient if you use one of the following in your dressing: rice vinegar; white wine vinegar; raspberry, blueberry or other fruit vinegar; champagne vinegar; lemon, lime or orange juice. Start experimenting by beginning with two parts oil to one part vinegar or citrus juice.

Balsamic Vinegrette:
3/4 C. Extra Virgin Olive Oil
1/4 C. Balsamic Vinegar
2 Tbsp. dijon mustard
1 clove garlic
salt to taste
pepper to taste

Whisk to combine.

Strawberry Salad Dressing

I made this last night and it ROCKED my world!!

1 lb. strawberries, hulled and sliced
3 Tbsp. fresh lime juice
2 tsp. honey
1 tsp. olive oil
salt and peper

In blender puree 3/4 c. strawberries with lime juice, honey, oil, 1/4 tsp. salt and 1/8 tsp pepper.

I used it on salad mix topped with rotisserie chicken and the remaining strawberries. It was fabulous!
