Peach Crisp

 4 C. fresh peaches (about 3 lbs)

2 Tbsp sugar

1 Tbsp corn starch

1/2 Tbsp lemon juice

Crumble:

1/3 C rolled oats

3/4 C Flour

1/2 C brown sugar

1/2 C sugar

8 Tbsp COLD butter

Heat oven to 350 degrees.  Place sliced peaches, sugar, cornstarch and lemon juice in a bowl.  Toss to coat

In a small bowl, mix oats, flour, brown sugar, and sugar.  Cut in cold butter until combine

Place in 9 inch baking dish.  Top with crumble and bake for 20-25 minutes.

TIPS:

Boil peaches for 30 second then plunge into ice water.  The skins will peel right off with little or no effort.
